The tips of bamboo shoots are used, and after sufficient lactic acid fermentation and ripening, they are seasoned with sesame oil, chili oil, and clear water soup to create a flavor with just the right amount of spiciness and deep umami.

You can use it as is as a side dish or appetizer, or as an ingredient in dishes.
