This is a blended miso (mixed miso) made with additive-free, domestically sourced "Hatcho miso" and "rice miso."

No alcohol or seasonings are used, which inhibit the activity of yeast.

All of the miso used is made from domestically grown soybeans and rice.

"Akadashi miso" is softer than "Hatcho miso," making it easier to use and characterized by its mellow flavor.

It can be used in a variety of dishes, including miso soup.
