Shio kouji can make fish and meat softer by putting them.
Weight of fish/meat : shio kouji = 10 : 1
For tsukemono making.
1~2 table spoon of shio kouji : 100g of vegetable
200g in a tube.
After opening it, keep it in the fridge and use them up within 2 months.
